Simplest Ever Microgreens “Chimmichurri” Sauce Recipe

The most common way to enjoy microgreens is raw, on top of your meal or mixed into a salad where you’ll get that texture, color, crunch, and fresh veggie goodness. But, there are other ways to incorporate microgreens into your daily routine.

Enter the Simplest Ever Microgreens Sauce. This sauce is so versatile, it will compliment vegan, omnivore, pescatarian, vegetarian, and carnivore-lover menus.

Kind of like a chimmichurri sauce, this sauce combines microgreens, olive oil, garlic, and salt/pepper. You can also add nuts or seeds to give the sauce some crunch too.

Simplest Ever Microgreens Sauce

Time: 5 minutes active, 30 minutes inactive
Makes 1 larger serving, 2 small servings


Ingredients

  • 2 Good Handfuls of Mixed Microgreens (Best using a microgreens mix with spicy varieties such as Radish, Mustard, and Cress. We sell a blend a spicy blend at our farmer’s markets, use two trays. Or you can grow your own with one of our kits!)

  • 1 garlic clove

  • 1/2 lemon squeezed

  • 1/2 cup extra virgin olive oil

  • salt/pepper to taste.

  • Optional- sunflower seeds, or other nuts. Just a few tablespoon or two.


Directions:
Combine all ingredients to your blender or food processor. Blend or process. Scrap down sides as needed to make sure all the microgreens and garlic get chopped up about 20 seconds. Let the sauce rest for 30 minutes or so to let the flavors get happy. Spoon sauce generously wherever you please.

Try it over:

  • Roasted Veggies

  • Roasted Chicken

  • Homefries

  • Spooned over a smooth soup

  • Or use it as a veggie dip.
