Cucumber & Radish Microgreen Tea Sandwiches

Here's our modern microgreens-y twist on Cucumber tea sandwiches just in time for the Royal Wedding of Prince Harry and Meghan Markle this weekend. These English Inspired finger sandwiches will make the perfect snack to accompany your spot of tea (we like Earl Grey but English Breakfast will do too) while watching their nuptials on TV.

Ingredients:

Sandwich Bread (try pumpernickel it is delightful)

Cucumber, thinly sliced into rounds

Whipped Cream Cheese

Radish Microgreens (find fresh at farmers markets, or grow your own with our kits)

Directions

Remove the crusts from two slices of bread.  Cut each slice of bread into four equal bite-sized pieces.  Spread a tablespoon, or so, of cream cheese on each square of bread.  Top with a good pinch of fresh radish microgreens.  Place one cucumber round on each square.  

Serve with English Tea for a Royal Inspired snack.
