We’ve all been there, thinking we know our friends-who they are, what they stand for, their values. Then in a mere moment, a whisper, really, your perfectly formed image shatters.

It happened to me a few weeks ago when I casually opened the refrigerator door at my friend's house. Dozens–dozens!-- of half empty store-bought salad dressings. I closed the door slowly, without touching any of them, and casually asked if they had any lemons.

Theatrics aside, I was surprised to see so many commercial salad dressings in the home of two foodies with a magazine-worthy home garden. Homemade salad dressing tastes fresher, is totally customizable, doesn’t have all the unreadable preservatives and emulsifiers, and takes minutes to whip up.

If you only know one salad dressing, it should be a basic lemon vinaigrette recipe. Lemon vinaigrette dressing is bright, it's zippy, it's got that tang that makes your taste buds sing.

No Special Tools Needed

Just remember, one part lemon juice to two parts olive oil. Use any measuring size you want– even that old souvenir shot-glass from that time you went to Las Vegas. One shot lemon juice and two shots olive oil.

Add salt and pepper and any extras. Think fresh or dried herbs, drops of garlic juice from a crushed clove, minced shallot, freshly grated parm.

Help the dressing stay emulsified and boost flavor and nutrients with a glob of dijon mustard and a blop of honey. There are no rules here. Do you.

The magic of lemon vinaigrette is not just taste and personal identity. It's a simple condiment with surprising health benefits that support our well-being from the inside out. It’s also so easy to make.
